  • Begin by grating the zucchini using the large holes of a box grater. Place the grated zucchini in a bowl, sprinkle with salt, and let it rest for 5-30 minutes to draw out excess moisture. After resting, wring out the zucchini using your hands or a cheesecloth to remove as much moisture as possible.
  • In a large mixing bowl, combine the drained zucchini with the desired ingredients such as eggs, cheese, flour, and any herbs or seasonings of your choice. Mix well until all ingredients are fully incorporated.
  • Shape the mixture into small patties, ensuring they hold together well. If the mixture feels too wet, you can add more flour or breadcrumbs to help bind it.
  • Heat olive oil in a skillet over medium heat. Once the oil is hot, carefully place the patties in the skillet, cooking them in batches if necessary to avoid overcrowding. Fry the patties for about 3-4 minutes on each side, or until they're golden brown and crispy.
  • Once cooked, transfer the patties to a paper towel-lined plate to drain any excess oil. Serve warm with your choice of dipping sauce, such as lemon-dill sauce.
  • For the best results, remember to thoroughly drain the zucchini to prevent sogginess in the patties. Additionally, feel free to experiment with different herbs and cheeses to customize the flavor profile to your liking.
