  • - 5-6 ounces of fresh baby spinach leaves
  • - 1 pint of cherry tomatoes or 1 can of petite diced tomatoes
  • - ¼ to ½ cup of grated Parmesan cheese
  • - Olive oil
  • - Salt and pepper
  • - Italian seasoning optional
  • - Pasta water as needed

  • Begin by cooking the pasta in a large pot of boiling salted water. Follow the package instructions and cook until al dente, usually around 8-10 minutes. Once cooked, reserve about ½ cup of pasta water and then drain the pasta.
  • While the pasta is cooking, heat a skillet over medium heat and add a generous drizzle of olive oil. Once hot, add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.
  • Next, add the tomatoes to the skillet along with salt, pepper, and Italian seasoning if desired. Cook the mixture for about 5-7 minutes, stirring occasionally until the tomatoes begin to soften and release their juices.
  • Stir in the fresh spinach and cook until wilted, which should take about 2-3 minutes. If the sauce appears too thick, gradually add some reserved pasta water to achieve the desired consistency.
  • Finally, add the drained pasta to the skillet and toss everything together until the pasta is well coated with the sauce. Sprinkle in the grated Parmesan cheese and mix well before serving.
