Soups With Rotisserie Chicken

  • - 4 cups chicken stock/broth
  • - 1 medium onion diced
  • - 2 carrots sliced
  • - 2 celery stalks diced
  • - 3 cloves garlic minced
  • - 1 teaspoon dried thyme
  • - 1 teaspoon dried oregano
  • - 1 teaspoon garlic powder
  • - Salt and pepper to taste
  • - 1 cup rice or pasta optional
  • - Fresh herbs for garnish optional

  • Cooking Instructions:
  • In a large pot, heat a tablespoon of olive oil over medium heat. Add the diced onions, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened and the onions are translucent.
  • Stir in the minced garlic, dried thyme, dried oregano, and garlic powder. Cook for an additional 1-2 minutes until fragrant.
  • Pour in the chicken stock/broth and bring the mixture to a boil. Once boiling, reduce heat to a simmer.
  • Add the shredded rotisserie chicken to the pot and stir well. If you're using rice or pasta, add it to the pot at this stage and cook according to package instructions until tender.
  • Season the soup with salt and pepper to taste. Allow it to simmer for 15-20 minutes, stirring occasionally. Taste and adjust seasoning as needed.
  • Once cooked, serve hot in bowls and garnish with fresh herbs if desired. Enjoy!
  • Extra Tips:
  • For the best flavor, be sure to taste and adjust the seasoning throughout the cooking process. You can also use the chicken carcass from the rotisserie chicken to make a rich homemade broth, which can enhance the overall taste of your soup.
  • If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days, or freeze for longer storage. Skimming the fat from the broth can help reduce greasiness, but leaving some in can add a delicious richness to your soup.
