SLOW COOKER PORK TENDERLOIN

  • 1.5 to 2 pounds pork tenderloin
  • 1 cup chicken broth
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons minced garlic
  • 1 tablespoon ground ginger
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 tablespoon cornstarch optional, for thickening sauce
  • Fresh parsley for garnish optional

  • Begin by preparing the pork tenderloin. Pat it dry with paper towels and season it with salt and black pepper on all sides.
  • In a bowl, mix together the chicken broth, soy sauce, honey, minced garlic, and ground ginger. This will be your marinade.
  • Place the pork tenderloin in the slow cooker and pour the marinade over the top, ensuring the meat is well-coated.
  • Cover the slow cooker and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the pork is tender and easily shreds with a fork.
  • Once cooked, remove the pork tenderloin from the slow cooker and let it rest for about 10 minutes before slicing.
  • If you prefer a thicker sauce, you can transfer the remaining liquid to a saucepan, bring it to a simmer, and mix in cornstarch until desired thickness is reached.
  • Serve the sliced pork tenderloin with the sauce drizzled on top and garnish with fresh parsley if desired.
  • For the best results, consider marinating the pork tenderloin overnight in the refrigerator before cooking. This will enhance the flavors even more.
  • Additionally, you can experiment with different herbs and spices based on your preference—smoked paprika or cumin can add a nice twist.
