Ruths Chris Sweet Potato Casserole Copycat

Ingredients

  • Ingredients:
  • - 2-3 cups mashed sweet potatoes
  • - 3/4 cup to 1 cup sugar
  • - 1/4 teaspoon to 1 teaspoon vanilla extract
  • - 1-2 eggs well beaten
  • - 1/4 cup to 1 stick melted butter
  • - 3/4 cup to 1 cup brown sugar
  • - 1/4 cup to 1/3 cup flour
  • - 3/4 cup to 1 cup nuts pecans preferred
  • - 1/4 cup to 1/3 stick melted butter for crust
  • - 1/4 teaspoon salt optional

Instructions

  • Cooking Instructions:
  • Preheat your oven to 350 degrees Fahrenheit. Begin by baking the sweet potatoes for about 1 hour until soft. Once baked, allow them to cool before peeling and mashing them until smooth.
  • In a large mixing bowl, combine the mashed sweet potatoes with sugar, vanilla extract, beaten eggs, and melted butter. Use a hand mixer to beat the mixture thoroughly until it becomes fluffy and well incorporated.
  • Grease a baking dish or spray it with nonstick spray. Pour the sweet potato mixture into the dish, spreading it evenly.
  • In another bowl, prepare the crust mixture by combining brown sugar, flour, nuts, melted butter, and salt. Mix until the ingredients are well combined and crumbly.
  • Evenly sprinkle the crust mixture over the surface of the sweet potato mixture in the baking dish.
  • Place the dish in the preheated oven and bake for 30-35 minutes, or until the crust is golden brown and the sweet potato filling is firm.
  • Once baked, remove the casserole from the oven and allow it to set for at least 30 minutes before serving. If you prefer, you can cover the casserole and refrigerate it before baking the crust, adding an extra 10 minutes of baking time if chilled.
  • Extra Tips:
  • For a richer flavor, consider using brown sugar in the sweet potato mixture for added depth. Additionally, you can customize the nuts in the crust according to your preference, or even omit them entirely for a smoother texture.
  • When baking, keep an eye on the casserole in the final minutes to verify it doesn't over-brown. Finally, feel free to experiment with spices such as cinnamon or nutmeg to enhance the flavor profile of the sweet potatoes!
