  • In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, allspice, and salt until well combined.
  • In another bowl, mix the pumpkin puree, sugar, eggs, and milk until smooth and fully combined.
  • Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
  • Pour the batter into the greased loaf pan, smoothing the top with a spatula.
  • Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Once baked, allow the loaf to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  • For best results, store your pumpkin bread in an airtight container at room temperature for up to 4 days. You can also freeze slices for later enjoyment.
  • If you wish to elevate the flavor, consider adding nuts, chocolate chips, or dried fruit to the batter.
