Pumpkin Puree French Toast

  • - 3-6 large eggs
  • - ¾ cup to 1 cup of milk
  • - ½ cup pumpkin puree
  • - 1 teaspoon pumpkin pie spice
  • - ½ teaspoon cinnamon
  • - ¼ cup sugar optional
  • - Thick slices of bread Texas toast, brioche, or challah
  • - Butter or non-stick spray for cooking

  • In a shallow bowl or baking dish, whisk together the eggs, milk, pumpkin puree, pumpkin pie spice, cinnamon, and sugar until well combined.
  • Preheat a non-stick skillet or griddle over medium heat. Add butter or non-stick spray to coat the surface.
  • Dip each slice of bread into the egg mixture, making sure both sides are evenly coated. Avoid soaking the bread for too long to maintain its structure.
  • Place 2-3 slices of the soaked bread onto the skillet and cook for about 2-3 minutes on each side or until golden brown and cooked through.
  • Continue cooking in batches, adding more butter or spray as needed, until all the slices are cooked. Serve hot with your choice of toppings.
  • For the best results, remember to keep the heat at a medium level to prevent burning while making sure the inside of the French toast cooks through. Using high-quality, thick bread will enhance the texture and prevent excessive sogginess.
