  • In a large mixing bowl, combine the spice cake mix and pumpkin puree. Use an electric mixer or a whisk to mix until well blended. Verify there are no lumps in the batter.
  • Evenly distribute the batter among the 12 muffin liners, filling each about 2/3 full to allow room for rising.
  • Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Keep an eye on them, as some muffins may take 24-26 minutes depending on your oven.
  • Once baked, remove the muffins from the oven and let them cool in the pan for 5-10 minutes. Then, transfer the muffins to a wire rack to cool completely.
