Cooking Instructions
In a medium saucepan over medium heat, combine the peaches, sugar, butter, cinnamon, and nutmeg. Stir the mixture until the butter melts and the ingredients are well combined.
In a small bowl, mix cornstarch with a little water or oil to create a slurry. Once the peach mixture starts to bubble, add the cornstarch slurry to the saucepan, stirring continuously until the mixture thickens, which should take about 10-15 minutes.
Remove the saucepan from heat and stir in the vanilla extract. Allow the peach filling to cool completely before assembling the egg rolls.
To assemble the egg rolls, place an egg roll wrapper on a clean surface, with a corner pointing towards you. Spoon a small amount of the cooled peach filling onto the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll up tightly to seal the egg roll. Repeat this process for all wrappers.
If frying, heat oil in a deep skillet over medium-high heat. Fry the egg rolls in batches until golden brown, flipping halfway through. Drain them on paper towels.
If air frying, preheat your air fryer to 390°F and cook the egg rolls for 7 minutes, flipping halfway through.
Once cooked, drizzle the egg rolls with a powdered sugar glaze or toss them in a cinnamon-sugar mixture for added sweetness. Serve warm and enjoy! Air frying option available for those looking to enjoy a healthier cooking method.
For the best results, verify that your peach filling is cooled completely before assembling the egg rolls, as this will help prevent the wrappers from becoming soggy.
If you prefer a healthier option, air frying is a great alternative to deep frying, providing a crispy texture with less oil. Feel free to experiment with different toppings or serve with vanilla ice cream for a decadent dessert experience!
