  • 400 g spaghetti
  • 6 cloves garlic thinly sliced
  • 1/2 cup extra virgin olive oil
  • 1/4 teaspoon red pepper flakes adjust to taste
  • Salt to taste
  • Fresh parsley chopped (for garnish)
  • Grated Parmesan cheese optional

  • Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté until it turns golden brown, being careful not to burn it, about 1-2 minutes.
  • Add the red pepper flakes to the skillet and stir for about 30 seconds to release their flavor.
  • Add the drained spaghetti to the skillet, along with a splash of the reserved pasta water. Toss everything together to coat the pasta in the garlic oil. If the pasta seems dry, add more pasta water as needed.
  • Season with salt to taste and remove from heat. Serve hot, garnished with fresh parsley and grated Parmesan cheese if desired.
