  • 1 pound ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon Italian seasoning
  • 2 tablespoons tomato paste
  • 1 cup chicken or beef broth
  • 1 can 14.5 ounces diced tomatoes
  • 1 cup half and half or heavy cream
  • 1 cup grated cheese e.g., Parmesan or cheddar
  • 8 ounces pasta e.g., penne or rotini
  • Fresh herbs optional, for garnish

  • In a large skillet, heat olive oil over medium heat. Add the ground beef and cook, breaking it apart with a spatula, until it's browned and no longer pink. Drain off any excess fat.
  • Stir in the chopped onion and minced garlic, cooking until the onion is softened and translucent, about 3-4 minutes.
  • Season the beef mixture with salt and Italian seasoning. Add the tomato paste and cook for an additional minute, allowing the flavors to meld.
  • Pour in the chicken or beef broth and diced tomatoes. Bring the mixture to a boil, then reduce the heat to a simmer. Cook for about 15-20 minutes, stirring occasionally.
  • If the sauce is too thin, you can thicken it by adding a little flour or reserved pasta water. Stir in the half and half or heavy cream, mixing well to combine.
  • While the sauce simmers, cook the pasta according to the package instructions until al dente. Reserve some pasta water, then drain the pasta and toss it with a little olive oil to prevent sticking.
  • Add the cooked pasta to the sauce, tossing everything together until the pasta is well coated. Stir in the grated cheese until melted and fully incorporated.
  • Serve the Pasta Beef hot, garnished with fresh herbs and additional cheese if desired.
  • For best results, remember to taste and adjust the seasonings as you cook. You can add a pinch of red pepper flakes for a hint of spice or toss in some fresh spinach towards the end for added nutrition.
