  • In a mixing bowl, sift together the all-purpose flour, sifted cake flour, cornstarch, baking powder, baking soda, and salt.
  • In another bowl, whisk together the canola oil, sour cream, granulated sugar, eggs, and vanilla extract until well combined.
  • Gradually stir the dry flour mixture into the wet ingredients until just incorporated. Be careful not to overmix.
  • Gently fold in the crushed pineapple, along with its juice, using a spatula until evenly distributed.
  • Lightly tap the cake tins on the counter to remove any air bubbles from the batter.
  • Pour the batter into the prepared baking dish or divide it evenly between the two cake tins.
  • Bake in the preheated oven for 20-25 minutes for a 9×13" dish, or 30-33 minutes for cake tins, covering with foil if the tops start to brown too quickly.
