MINI BAKED CHICKEN TACOS

  • - 1 packet taco seasoning
  • - 1 cup shredded cheese cheddar or Mexican blend
  • - 12 mini taco shells
  • - 1 cup diced tomatoes
  • - 1 cup shredded lettuce
  • - 1/2 cup sour cream
  • - 1/4 cup sliced jalapeños optional
  • - Fresh cilantro for garnish optional

  • Cooking Instructions:
  • Preheat your oven to 375°F (190°C). While the oven is heating, heat the olive oil in a large skillet over medium heat. Add the ground chicken and cook until it's fully cooked through, breaking it apart with a spatula.
  • Once the chicken is cooked, stir in the taco seasoning and a splash of water. Mix well to combine and allow it to simmer for about 3-5 minutes until the sauce thickens slightly.
  • Arrange the mini taco shells on a baking sheet. Spoon the seasoned chicken mixture into each taco shell, filling them generously.
  • Sprinkle shredded cheese over the filled taco shells, making sure to cover them evenly.
  • Bake the taco shells in the preheated oven for 10-12 minutes, or until the cheese is melted and the shells are crispy.
  • Remove the tacos from the oven and allow them to cool slightly. Top each taco with diced tomatoes, shredded lettuce, sour cream, jalapeños, and fresh cilantro as desired.
  • Extra Tips:
  • For added flavor, consider marinating the ground chicken in lime juice and spices before cooking. You can also experiment with different toppings like avocado, salsa, or guacamole to enhance the taste.
