  • 400 g spaghetti
  • 6 cloves garlic thinly sliced
  • 1/2 cup extra virgin olive oil
  • 1 teaspoon red pepper flakes
  • Salt to taste
  • Fresh parsley chopped (for garnish)
  • Grated Parmesan cheese optional

  • Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve about 1 cup of pasta water before draining the spaghetti.
  • In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté for 2-3 minutes, or until the garlic is golden and fragrant, being careful not to burn it.
  • Stir in the red pepper flakes and cook for an additional 30 seconds. Remove the skillet from heat.
  • Add the drained spaghetti to the skillet and toss to combine, ensuring the pasta is well coated with the garlic oil. If the pasta seems dry, add a bit of the reserved pasta water until you reach the desired consistency.
  • Season with salt to taste and toss in the chopped parsley. Serve immediately, garnished with extra parsley and a sprinkle of grated Parmesan cheese, if desired.
