  • Begin by melting the butter in a medium saucepan over medium heat. Once melted, add the flour and whisk continuously to create a roux, cooking for about 1-2 minutes until it forms a paste.
  • Gradually pour in the milk while whisking continuously to avoid lumps. Keep stirring as the sauce cooks, allowing it to thicken to a consistency similar to gravy or heavy cream.
  • Season the sauce with salt, pepper, and any additional spices you desire to enhance the flavor.
  • In a separate pot, cook the macaroni according to the package instructions until al dente. Drain the macaroni and set it aside.
  • Add the grated cheese to the thickened sauce, stirring until the cheese is fully melted and the sauce is smooth.
  • Combine the cooked macaroni with the cheese sauce, stirring to guarantee the pasta is evenly coated.
  • If baking, preheat your oven to 325-350°F. Transfer the mac and cheese to a baking dish and top with additional grated cheese and breadcrumbs if desired. Bake for 15-20 minutes, or until the top is golden brown and the cheese is bubbly. For a crispy topping, you can use the broiler for a minute or two at the end.
