HEALTHY TACO STUFFED TOMATOES

Ingredients

  • Ingredients:
  • - Large tomatoes
  • - Ground beef
  • - Taco seasoning
  • - Cheese cheddar or Mexican blend
  • - Onions
  • - Corn optional
  • - Spinach optional

Instructions

  • Cooking Instructions:
  • Preheat your oven to 375°F (190°C). While the oven is heating, prepare your tomatoes by carefully coring and hollowing them out. Set aside the insides for later use if desired.
  • In a skillet over medium heat, brown the ground beef along with diced onions until the meat is fully cooked and the onions are soft. Drain any excess fat.
  • Stir in the taco seasoning, mixing well to combine. If using, add corn and spinach to the beef mixture. Cook for a few more minutes until the vegetables are tender.
  • Fill each hollowed tomato with the beef and vegetable mixture, packing it down gently. Top each filled tomato with a generous amount of cheese.
  • Place the stuffed tomatoes in a baking dish and bake in the preheated oven for about 20-25 minutes, or until the tomatoes are heated through and the cheese is melted and bubbly. Taco Stuffed Tomatoes are a great option for using summer produce.
  • Extra Tips:
  • Feel free to get creative with your taco stuffed tomatoes! You can substitute ground beef for ground turkey or chicken for a lighter option.
  • Additionally, consider adding cooked rice or quinoa to the filling for extra texture and nutrition.
  • These stuffed tomatoes can also be made ahead of time and reheated, making them a convenient choice for busy weeknights.
  • Serve them with your favorite toppings like sour cream, salsa, or guacamole for an added burst of flavor!
