  • Thaw the puff pastry according to the package instructions. Once thawed, roll out each sheet to about ⅛" thick on a lightly floured surface.
  • Cut each sheet into quarters or smaller squares, depending on your desired size for the pastries.
  • On one half of each square, spread a layer of Dijon mustard, followed by a portion of your chosen cheese and a slice of ham.
  • Wet the exposed edges of the pastry squares with water, then fold the pastry over to cover the filling. Press to seal the edges firmly.
  • Crimp the edges with a fork to guarantee a tight seal and to create a decorative edge.
  • Preheat your oven to 400°F. While the oven is heating, make vent holes in the top of each pastry to allow steam to escape during baking.
  • Brush the tops of the pastries with the egg wash (a mixture of beaten egg and water) and sprinkle with coarse sea salt.
  • Bake in the preheated oven for 20-28 minutes, or until the pastries are golden brown and puffed.
  • Once baked, remove from the oven and let cool slightly before serving. Cut into squares or triangles and serve warm.
  • For the best results, remember to use thinly sliced ham and consider adding fresh herbs like thyme for a burst of flavor. If you prefer a hint of sweetness, a drizzle of honey can complement the savory elements beautifully.
