  • Preheat your grill to medium-high heat. Confirm the grates are clean and greased to prevent sticking.
  • Husk the corn and remove any silk. Rinse the ears under cold water and pat dry.
  • In a mixing bowl, combine the softened butter, chipotle powder, lime zest, lime juice, and a pinch of salt. Mix until well blended. Adjust seasoning to taste.
  • Brush the corn with a little olive oil and place it directly on the grill grates. Grill the corn for about 10-15 minutes, turning occasionally, until the kernels are tender and slightly charred.
  • Once the corn is grilled to your liking, remove it from the grill and let it cool for a minute. Then, generously spread the chipotle-lime butter over each ear of corn, allowing it to melt into the warm kernels.
