  • In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  • Gradually incorporate the dry ingredient mixture into the wet ingredients, mixing until just combined.
  • Gently fold in the jimmie sprinkles, being careful not to over-mix the dough.
  • Chill the dough in the refrigerator for about 30 minutes to help with texture and shape retention.
  • Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, leaving 2-3 inches between each cookie.
  • Bake the cookies in the preheated oven for 10-13 minutes or until they're lightly golden around the edges but still slightly under-baked in the center.
  • Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a cooling rack.
