Begin by peeling and coring the apples, then slice them into thin rings about ΒΌ inch thick. Use a cookie cutter or apple corer to remove the core from each apple slice.
In a medium bowl, mix together the flour, baking soda or baking powder, sugar, cinnamon, nutmeg (if using), egg, and buttermilk or milk with vinegar until well combined to form a batter. Using Honey Crisp or Granny Smith apples will yield the best results for flavor and texture.
Preheat about 2 inches of vegetable oil in a large skillet or pot over medium heat until hot enough for frying.
Dip each apple slice into the batter, allowing any excess to drip off before carefully placing them into the hot oil.
Fry the battered apple slices for 1-2 minutes on each side, or until they turn golden brown. Carefully flip them once the bottom side has browned.
