FRESH SOUTHERN PEACH COBBLER

  • - 6 large fresh yellow peaches
  • - 5 fresh peaches
  • - 2 lbs frozen sliced peaches about 6-7 cups thawed
  • - 1 29 ounce can sliced peaches in light syrup
  • - 1 cup brown sugar
  • - 1/4 cup granulated sugar
  • - 1 tablespoon lemon juice
  • - 1/2 teaspoon ground cinnamon
  • - 1/4 teaspoon ground nutmeg
  • - 1 teaspoon vanilla extract
  • - 1/2 teaspoon salt
  • - 1 cup self-rising flour or all-purpose flour with added baking powder and salt
  • - 1/2 cup milk can use evaporated milk or half-and-half
  • - 1/2 cup butter

  • Preheat your oven to 350 degrees F. Begin by preparing the peaches: if using fresh peaches, blanch them in boiling water for 45 seconds to 1 minute, then peel and slice. If using frozen peaches, verify they're thawed and drained of excess liquid.
  • In a large mixing bowl, combine the sliced peaches with brown sugar, granulated sugar, lemon juice, cinnamon, nutmeg, and a pinch of salt. Stir gently to coat the peaches evenly and set aside to allow the flavors to meld.
  • In a 9x13-inch baking dish, melt the butter in the oven as it preheats. Meanwhile, in another bowl, whisk together the flour, baking powder, and remaining salt. Add the milk and vanilla extract to the dry ingredients and stir until just combined.
  • Once the butter has melted, carefully pour the batter over the melted butter in the baking dish. Don't stir. Next, spoon the peach mixture (along with any juices) evenly over the batter.
  • Place the baking dish in the preheated oven and bake for 40-45 minutes or until the top is golden brown and the peaches are bubbly. Remove from the oven and allow to cool on a wire rack for about 20 minutes before serving.
  • Serve warm, ideally with a generous scoop of vanilla ice cream and additional fresh peaches if desired.
