  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the pumpkin purée, egg, and vanilla extract to the bowl, mixing until well combined.
  • In a separate bowl, whisk together the flour, baking soda, pumpkin pie spice, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Gently fold in the chocolate chips until evenly distributed throughout the dough.
  • Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 11-12 minutes, or until the edges are lightly golden. The centers may appear slightly underbaked; they'll firm up as they cool.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  • For best results, be sure not to overmix the dough, as this can lead to tough cookies. Also, if you prefer a more pronounced pumpkin flavor, feel free to add an extra tablespoon of pumpkin purée, but reduce the butter slightly to maintain the right consistency.
