  • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and allspice until well combined.
  • In another bowl, combine the pumpkin puree, milk, egg, melted butter, and vanilla extract. Mix until smooth and fully incorporated.
  • Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; a few lumps are okay.
  • Preheat a non-stick skillet or griddle over medium heat. Lightly grease it with cooking spray or a small amount of butter.
  • Pour about 1/4 cup of batter onto the hot skillet for each pancake. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for an additional 2-3 minutes, or until golden brown.
  • Remove the pancakes from the skillet and keep warm while you repeat with the remaining batter.
  • Serve the pancakes warm with maple syrup, whipped cream, or your favorite toppings.
  • For best results, verify your baking powder and baking soda are fresh, as this will help the pancakes rise properly.
  • Additionally, you can customize your pumpkin pancakes by adding chocolate chips or nuts to the batter for added texture and flavor.
