EASY DORITO CASSEROLE

  • - 1 large bag nacho cheese Doritos crushed
  • - 1 packet taco seasoning or 3 tablespoons
  • - 1 cup shredded cheddar cheese
  • - 1 cup shredded Monterey Jack cheese
  • - 1 cup sour cream
  • - 1 cup diced tomatoes
  • - 1/2 cup chopped green onions
  • - Salsa for serving, optional
  • - Black beans and corn optional

  • Preheat your oven to 350-375°F. In a skillet over medium heat, cook the ground beef until it's browned, breaking it apart with a spatula. Drain any excess fat from the skillet.
  • Stir in the taco seasoning and simmer the mixture for a few minutes, allowing the flavors to meld and the mixture to thicken.
  • In a 9x13 inch baking dish, spread half of the crushed Doritos evenly across the bottom. Layer the beef mixture on top, followed by another layer of crushed Doritos.
  • Spread a layer of sour cream over the beef mixture for added moisture and flavor. Then, sprinkle a generous amount of shredded cheddar and Monterey Jack cheese on top.
  • Cover the dish with aluminum foil and bake it in the preheated oven for 15-20 minutes. After that, uncover the dish and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  • Once done, remove the casserole from the oven and let it rest for a few minutes before serving. Top with diced tomatoes, green onions, and any other desired toppings like salsa or chopped cilantro.
