CROCKPOT PORK TENDERLOIN

  • - 1 cup chicken broth
  • - 1 tablespoon olive oil
  • - 2 cloves garlic minced
  • - 1 onion sliced
  • - 1 teaspoon dried thyme
  • - 1 teaspoon paprika
  • - 1 teaspoon salt
  • - 1/2 teaspoon black pepper
  • - 1 tablespoon Worcestershire sauce
  • - 2 tablespoons soy sauce
  • - Optional: fresh parsley for garnish

  • Begin by heating the olive oil in a skillet over medium-high heat. Sear the pork tenderloin on all sides until it's browned, which should take about 3-4 minutes per side. This step adds depth of flavor but is optional if you're short on time.
  • Once seared, place the pork tenderloin into the crockpot. Add the sliced onion and minced garlic on top of the meat.
  • In a separate bowl, mix together the chicken broth, Worcestershire sauce, soy sauce, thyme, paprika, salt, and pepper. Pour this mixture over the pork and onions in the crockpot.
  • Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the pork is tender and easily pulls apart with a fork.
  • When ready, remove the pork from the crockpot and let it rest for a few minutes before slicing. Serve with the onions and sauce from the crockpot drizzled over the top. Garnish with fresh parsley if desired.
  • For the best results, make sure to not lift the lid of the crockpot while it's cooking, as this can release heat and extend cooking time.
  • Additionally, if you have leftovers, they can be stored in an airtight container in the refrigerator for up to four days, making them perfect for quick lunches or dinners throughout the week.
