Chicken Patties

  • - 4 cups shredded chicken from 2 large chicken breasts
  • - 2 large eggs whisked
  • - 1/3 cup mayonnaise
  • - 1/3 cup all-purpose flour
  • - 3 Tbsp fresh dill finely chopped (or 1 Tbsp parsley)
  • - 3/4 tsp salt
  • - 1/8 tsp black pepper
  • - 1 tsp lemon zest
  • - 1 1/3 cups shredded mozzarella cheese
  • - 1 cup panko bread crumbs
  • - 2 Tbsp olive oil for sautéing

  • In a large bowl, mix together the whisked eggs, mayonnaise, flour, dill, salt, black pepper, and lemon zest until well combined.
  • Add the shredded chicken and mozzarella cheese to the mixture, stirring gently until the chicken is evenly coated.
  • Cover the bowl and refrigerate the mixture for at least 30 minutes to help the patties hold their shape.
  • Once chilled, use an ice cream scoop to portion the mixture into 12-15 equal portions. Shape each portion into a 1/2-inch thick patty.
  • Dip both sides of each patty into the panko breadcrumbs to coat thoroughly.
  • Heat a large non-stick skillet over medium heat and add 1 tablespoon of olive oil. Place half of the patties in the skillet and sauté for 3-4 minutes on each side, or until golden brown and cooked through.
  • Repeat the process with the remaining patties, adding more oil to the skillet if needed.
  • Once cooked, sprinkle the patties with a little salt and squeeze fresh lemon juice over them before serving.
  • Extra Tips:
  • For added flavor, consider experimenting with different herbs or spices in the mixture. You can also try incorporating finely chopped vegetables, like bell peppers or onions, for extra nutrition and texture.
  • If you prefer a healthier option, baking the patties in a preheated oven at 400°F for about 20-25 minutes can yield delicious results with less oil. Finally, serve your chicken patties with a side of dipping sauce, such as a tangy yogurt or a zesty aioli, for an extra layer of flavor.
