CHICKEN CHEESE ENCHILADAS

  • - 8 corn or flour tortillas
  • - 1 can 10 oz enchilada sauce
  • - 1 cup diced onions
  • - 1 can 4 oz chopped green chiles
  • - 1 teaspoon chili powder
  • - ½ teaspoon cumin
  • - Salt and pepper to taste
  • - Fresh cilantro for garnish
  • - Sour cream for serving

  • Preheat your oven to 350°F (175°C). In a skillet over medium heat, sauté the diced onions until they're translucent. Add the cooked chicken, green chiles, chili powder, cumin, salt, and pepper. Mix well and cook for an additional 3-5 minutes until heated through.
  • In a separate bowl, combine the sautéed chicken mixture with ½ cup of the shredded cheese. Stir until the cheese is evenly distributed throughout the filling.
  • Take a tortilla and spoon about ¼ cup of the chicken mixture onto the center. Roll the tortilla tightly around the filling and place it seam-side down in a baking dish. Repeat this process with the remaining tortillas and chicken mixture.
  • Once all the enchiladas are assembled in the baking dish, pour the enchilada sauce evenly over the top. Sprinkle the remaining cheese over the sauce.
  • Bake the enchiladas uncovered in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly. Remove from the oven and let them cool for a few minutes before serving.
