Cooking Instructions:
In a medium mixing bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, chopped rosemary, thyme, parsley, salt, and pepper until well combined.
Place the chicken breasts in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, making sure all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, ideally up to 2 hours for maximum flavor.
Preheat your grill to medium-high heat. Remove the chicken from the marinade and discard the leftover marinade.
Grill the chicken breasts for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken has nice grill marks.
Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing. This will help the juices redistribute throughout the meat.
For best results, always marinate your chicken for at least 30 minutes, but don't exceed 24 hours as the acid in the lemon juice can start to break down the chicken's texture.
