Banana Bread and Pumpkin Loaf

  • - 1 1/2 to 2 cups all-purpose flour
  • - 1/2 to 1 tsp baking soda

  • - 1/2 cup melted butter
  • - 3/4 cup to 1 cup brown sugar
  • - 2 cups mashed ripe bananas
  • - 1 to 2 tsp vanilla extract

  • - 1/2 cup vegetable oil for pumpkin banana bread

  • - 1 cup light brown sugar for pumpkin banana bread
  • - 1 cup pumpkin puree for pumpkin banana bread
  • - 2-3 ripe bananas for pumpkin banana bread
  • - Spices cinnamon, pumpkin pie spice for pumpkin banana bread

  • Cooking Instructions:
  • Preheat your oven to 350°F and grease and flour a loaf pan (either 8 1/2" x 4 1/2" or 9-inch). You can also line the pan with parchment paper for easy removal.
  • In a mixing bowl, whisk together the dry ingredients (flour, baking soda, and salt). If making pumpkin banana bread, sift in the additional spices at this stage (cinnamon, pumpkin pie spice).
  • In a separate bowl, mash the ripe bananas until smooth and measure out the required amount for your recipe. If making pumpkin banana bread, also measure out the pumpkin puree.
  • In another bowl, mix the wet ingredients (eggs, melted butter, brown sugar, mashed bananas, and vanilla extract) until well combined. For pumpkin banana bread, include the vegetable oil and pumpkin puree in this mixture.
  • Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 50-60 minutes for traditional banana bread, or 60-70 minutes for pumpkin banana bread. Check for doneness by inserting a toothpick or knife into the center; it should come out clean.
  • Allow the bread to cool in the pan for at least 1 hour before transferring it to a cutting board. Slice the bread after it has cooled completely.
  • Extra Tips:
  • When making banana bread or pumpkin banana bread, using overripe bananas will yield the sweetest flavor. If you have bananas that are starting to turn brown, it's the perfect time to bake!
  • You can also customize your recipe by adding nuts, chocolate chips, or dried fruits for added texture and flavor. Store any leftovers wrapped in plastic wrap or in an airtight container to keep it moist for days!
