AVOCADO MOZZARELLA AND TOMATO GRILLED CHEESE

  • Thick slices of bread Texas toast recommended
  • 1 ripe avocado
  • 1-2 fresh tomato slices
  • 2-3 thin deli-style mozzarella cheese slices
  • 2 tablespoons unsalted butter softened

  • Begin by buttering one side of each slice of bread generously with the softened unsalted butter. Make certain to cover the entire surface for a rich, golden crust.
  • Prepare the avocado by cutting it in half, removing the pit, and then either mashing it with a fork or slicing it into thin pieces, depending on your preference.
  • Assemble the sandwich by placing 2-3 slices of mozzarella cheese on the unbuttered side of one slice of bread. Layer the avocado and tomato slices on top of the cheese, then finish with another slice of mozzarella cheese before topping it with the second slice of bread (buttered side facing out). This sandwich is a comforting meal that features fresh tomato slices, smashed avocado, and creamy mozzarella cheese.
  • Heat a small skillet over medium heat until it's hot. Carefully place the assembled sandwich in the skillet and cook for 3-4 minutes, or until the bottom is golden brown and the cheese begins to melt.
  • Gently press down on the sandwich with a spatula to encourage even melting of the cheese. After 3-4 minutes, carefully flip the sandwich over and cook the other side for another 3-4 minutes until it's golden brown.
  • EXTRA TIPS
  • For best results, verify your skillet is preheated before adding the sandwich to achieve an even crust.
  • If you want to add extra flavor, consider spreading a thin layer of pesto or balsamic glaze on the inside of the bread before assembling.
  • Serve your grilled cheese immediately with a side of tomato soup, a fresh salad, or crispy fries for a complete meal. Enjoy!
