  • In a medium bowl, whisk together the sugar, flour, baking powder, and salt until well combined. Set this mixture aside.
  • In a large mixing bowl, beat the eggs, milk, oil, and vanilla extract until just combined.
  • Gradually add the dry ingredient mixture to the wet ingredients, stirring gently to combine. Be careful not to overmix.
  • In a separate bowl, toss the diced apples with cinnamon and sugar until they're well coated. Fold the apple mixture into the batter.
  • Pour the batter into the prepared loaf pan, filling it to about the ⅔ mark to allow for rising during baking.
  • Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  • Once baked, remove the loaf from the oven and let it cool for a few minutes in the pan. Then transfer it to a wire rack to cool completely before slicing and serving.
  • For the best results, consider using buttermilk instead of regular milk to enhance the loaf's moisture and flavor. Additionally, the moist texture of the loaf is enhanced by using varieties of apples like Jonagold, Honey Crisp, or Braeburn.
  • You can also add walnuts or other nuts for added texture and a delightful crunch. If you're looking for a decorative touch, try topping the loaf with additional apple slices before baking.
