AMAZING FORGOTTEN CHICKEN

Ingredients

  • Ingredients:
  • - 4 boneless skinless chicken breasts
  • - 1 cup long-grain white rice or brown rice
  • - 1 can cream of chicken soup
  • - 1 can cream of mushroom soup
  • - 2 cups chicken broth or whole milk
  • - 1 packet onion soup mix
  • - Optional: shredded cheddar cheese
  • - Optional: frozen vegetables
  • - Optional: fresh parsley for garnish

Instructions

  • Cooking Instructions:
  • Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish to prevent sticking.
  • Spread the uncooked long-grain white rice evenly across the bottom of the baking dish.
  • In a separate bowl, combine the cream of chicken soup, cream of mushroom soup, and your choice of chicken broth or whole milk. Mix well until smooth.
  • Pour the soup mixture over the rice, guaranteeing it covers the rice evenly.
  • Place the chicken breasts on top of the soup and rice mixture. Sprinkle the onion soup mix evenly over the chicken.
  • Cover the baking dish with foil or a lid to retain moisture, and place it in the preheated oven. Bake for approximately 1 hour.
  • After 1 hour, remove the cover and bake uncovered for an additional 30 minutes to crisp the tops of the chicken breasts.
  • Confirm the chicken reaches an internal temperature of 165°F (74°C) for safety. Let the dish stand for 5 minutes before serving. If desired, sprinkle shredded cheddar cheese on top during the last 10 minutes of cooking for extra flavor. The original Forgotten Chicken recipe is a vintage dish that remains popular today.
  • For the best results, keep an eye on the cooking time, especially if using brown rice, as it may require additional time to cook thoroughly.
  • You can also experiment with different vegetables or herbs, such as adding frozen mixed vegetables to the rice before pouring in the soup mixture for added nutrition and color.
  • Don't forget to let the dish rest for a few minutes after baking to allow the flavors to meld, making it even more delicious when served!
